Mix egg whites, almond milk, pumpkin puree and vanilla extract in a small bowl. Add lava cake batter mixture and stir until batter is smooth.
Spray your microwave safe bowl with coconut oil (or your choice of cooking spray) then pour the mixed lava cake batter in.
Optional: For peanut butter lovers try adding a Tbsp of peanut butter to the cake batter before cooking!
Cook in microwave for 1 minute and 30 seconds. Take out of microwave and flip onto plate to gently remove from small bowl.
Serve with lava sauce. To make lava mix, combine lava sauce mixture with 2 Tsp almond milk and stir until smooth. Pour on cake and serve. Refrigerate if not consumed immediately.
