Mix egg whites, almond milk, pumpkin puree and vanilla extract in a small bowl. Add lava cake batter mixture and stir until batter is smooth.
Spray your microwave safe bowl with coconut oil (or your choice of cooking spray) then pour the mixed lava cake batter in.
Optional: For peanut butter lovers try adding a Tbsp of peanut butter to the cake batter before cooking!
Cook in microwave for 1 minute and 30 seconds. Take out of microwave and flip onto plate to gently remove from small bowl.
Serve with lava sauce. To make lava mix, combine lava sauce mixture with 2 Tsp almond milk and stir until smooth. Pour on cake and serve. Refrigerate if not consumed immediately.

For a dessert with zero sugars I wasn't expecting it to taste that great, but was pleasantly surprised. Great on a Keto diet and packed with protein. Delicious!
I love that this is healthy and delicious. It is easy and straightforward to fix. My granddaughter and I had it for our dessert after lunch. She added whip cream to hers.
I was surprised by how fast and straightforward this recipe was to make. I love that it calls to use Almond milk as I'm lactose intolerant and gives you the option of apple sauce or pumpkin puree for a thickener. I decided to use apple sauce in the chocolate and vanilla recipes. However, I could see how the pumpkin puree could give it a little more spice and think it'd be delicious in the vanilla lava cakes. I didn't try out the peanut butter suggestion, but I will try that with the chocolate lava cakes next time. They have a great texture, as they are soft, moist, and have a gooey center, as long as you don't overcook them in the microwave. If you do, it'll end up more like a sponge cake, which is still delicious and pairs great with some vanilla ice cream. If you're looking to cure a sweet craving and get your protein in, these lava cakes couldn't be any better!
I was blown away by how good these were. Not what I expected. A bit of a luxury for me but, well worth it. When I'm craving something sweet I can quickly make one and it really feels like the protein curbs my appetite for more sweets. Love it. Thanks Koa.
I’m used to healthy desserts (especially Keto ones) being tasteless and dry. So with these being made in the microwave, I expected to be disappointed. But the idea of these was too enticing to pass up. I was shocked at how great these were!! They were insanely moist, and had a nice springy texture that I wasn’t expecting from a Keto dessert. I always keep pumpkin purée on hand for a couple other desserts I’m able to eat, so this came together really fast. I couldn’t believe it came out of my microwave.
